From some of the finest sites in the appellation; Les Cabrieres, La Crau, Couthezon and Nayls with vines over 50 years old. Jean-Jacques Sabon’s son-in-law, Didier Negron makes a sublime wine which is a big favourite of Robert Parker.
All the grapes are carefully de-stemmed before fermentation which takes place over 20 days in small cement vats and steel cuves. The resulting wine is matured in boudres and used barriques and has no finings or even filtration making it as pure as can be.
