This is a properly Natural Wine and rather rustic too! No finings, no filtration, no treatments and no added yeast mean it might drop sediment and appear cloudy or hazy. Decant it carefully to get the best out of it.
Cerasuolo di Vittoria (which interestingly is the only DOCG wine in all of Sicily) is made with 60% Nero d’Avola and 40% Frappato.
It’s vinified at controlled temperature and aged for 8 months in barriques followed by 48 months in bottle.
The wines from this less-fashionable southeast corner of the island have a unity and authenticity that make them a true reflection of their terroir.
Surprisingly given the baking hot climate, this wine expresses delicacy of aroma and a seriously dry finish rather than being punchy and powerful.
