Grapes are picked by hand and brought to refrigerated storage in small baskets to prevent damage. Fermentation is in temperature controlled stainless steel. The wine is then left on the lees for 3 months until December/ Janury when it is bottled. This careful process makes a wine which is both fresh and full bodied.. To help you to serve it at the perfect the temperature the label has a small butterfly which turn blue when it gets cold
