Sparkling red is something the Aussies do really well, and few have been at it longer than Ian Hollick.

His sparkling Merlot has taken on legendary status since the first vintage back in 1992. It’s properly full bodied, made from top notch fruit aged in oak for 2 years before re-fermenting in the bottle (hence the fizz) and brimming with plum and mocha flavour.
