As you probably know, Absinthe is a green, anise-flavoured spirit derived from various botanicals, in particular wormwood.
This Cornish Absinthe from Pocketful of Stones Distillers has its stunning pale green colour enhanced by the unique use of Cornish seaweed, which also adds background unami flavour. It fills your glass with aromas of aniseed and delicious herbal undertones.
They also source their wormwood from a nice chap called Josh at Wild St Ives, who grows it himself on the cliffs near Zennor (just above Pendour Cove – the exact location of the Morveren legend).
Despite the hefty 66% ABV, the finish is very smooth and long, with a fresh zing and precious little burn.
